Most of the fruit was sourced from a high altitude vineyard in the Bendigo area of Central Otago where warm days and cool nights build intense, ripe flavours. The grapes are hand-harvested and whole-bunch pressed. A small proportion (15%) is barrel-fermented before being blended with the tank component and allowed three months on the lees in tank with regular stirring. Concentrated quince, pear, apple and mineral flavours. Very pure with a lengthy finish. Dry, or perhaps off/dry Pinot Gris in a very typical regional style.
