The wines of Alsace provided the inspiration for this wine. Low yielding vineyards provided concentrated fruit that was hand-picked and whole-bunch pressed. 25% of the wine was fermented in old oak barriques and allowed to mature for seven months with regular lees stirring. The remainder was fermented and stored in stainless steel tanks. Lovely layered wine with pear, apple and bready/yeast flavours. It has an ethereal texture with real weight and complexity. Power delivered with great subtlety.
